Nut-Based Falafels

Ingredients
- 1 cup cashews
- 1 cup tinned chickpeas
- 1 garlic clove, skin removed
- 2 teaspoons ground cumin (optional)
- ¼ cup fresh coriander
- 1 Tablespoon tahini
- ½ cup sesame seeds
Directions
- Preheat oven to 180°C and line a baking tray with baking paper.
- Place cashews, chickpeas, garlic, cumin, fresh coriander and tahini into the Vitamix Blender. Blend on a high speed until mixture forms a course paste.
- Take a spoonful of the falafel mix and roll into balls. Roll each ball in the sesame seeds.
- Place rolled falafels onto baking paper lined tray and press down slightly. Brush lightly with olive oil and place into oven to cook for 25 minutes, or until golden brown on top.
- Remove from oven and allow to cool before transferring to an airtight container. Store in the fridge for 3-4 days or in the freezer for 3 months.
