Shiitake Blended Burger

You would never know that this burger is 50% mushroom. Traditional burger flavour comes through with no texture changes.

Ingredients

For the Burger:

  • 340g shiitake mushrooms, stemmed
  • 1 small jalapeño, stemmed
  • 30g (1 medium) shallot, peeled
  • ½ tsp salt, optional
  • ¼ tsp ground black pepper
  • 1 garlic clove
  • 340g 80/20 ground beef

Toppings:

  • 5g (¼ cup) rocket
  • 50g (¼ cup) pickled turnips
  • 75ml (5 tbsp) Harissa Aioli
  • 9 whole grain buns, slider size

    Directions

    1. Place the mushrooms, salt, pepper, jalapeno, shallot, and garlic into the Vitamix container and secure the lid. Start the blender on its lowest speed, then quickly increase to Variable 7. Blend for 30 seconds, using the tamper to push ingredients toward the blades.
    2. Fold mushroom mixture into the ground beef. Form into nine 85g patties.  
    3. To cook, heat a large skillet over medium-high heat. Add 1 tbsp of oil to the pan and place burger patties into the pan (do not over crowd the pan). You may cook two at a time. Sear 3 minutes on each side and then place in 400°F (200°C) for about 15 minutes or until desired doneness.  
    4. To serve: Toast bun, smear aioli on bun, place burger on bun, and top with rocket and pickled turnips.

      Chef's Note:

      1. Blending mushrooms into your burger is a tasty way to add extra nutrients while reducing saturated fats and cholesterol.  This healthier version of a traditional burger tastes even better topped with rocket and pickled turnips add flavour and boost nutrition and fibre.
