Vegan Cashew Custard

Ingredients
150 g cashews, soaked 150 ml plant-based milk 1 Tablespoon vanilla bean paste 3 Tablespoons maple syrup
Directions

Soak the cashews for 2 – 3 hours in advance. -
Drain, rinse and squeeze out the excess water from the cashews. Add the cashews, plant-based milk, vanilla bean paste, and the 3 Tablespoons of maple syrup to the Vitamix blender. Start the blender on its lowest speed, then quickly increase to its highest speed and blend until completely smooth. -
If you wish to serve hot, gently heat in a pot, stirring contin ually for 2 – 3 minutes.
