Ingredients
COOKIE CUPS- 1 cup Almond Meal
- 3/4 cup Oat Flour
- 1/4 cup Protein Powder
- 1/4 cup Maple Syrup
- 1/4 cup Almond Milk
- 3 tbs Peanut Butter
- Cacao Nibs to taste
CARAMEL
- 1 cup Dates (soaked)
- 1/4 cup Almond Milk
- 2 tbs Coconut Oil
- 1 tbs Peanut Butter
- Chopped Peanuts to taste
TOPPING
- 40g Dark Chocolate (melted)
Directions
- Preheat oven to 180°c.
- Add ingredients for cookie cups to a bowl and stir until combined and a thick dough forms.
- Press into silicone muffin moulds in a cup shape. Bake for 20 minutes and leave at room temperature to firm. Put in the fridge to cool.
- Make caramel by adding dates, almond milk, coconut oil and peanut butter to the Vitamix container and blend until smooth. Fold in peanuts.
- Fill cooled cookie cups with caramel mixture and top with melted chocolate. Put back in the fridge to set.
