Raspberry Chocolate Cups

Ingredients
- 1 cup almonds
- 1 cup oats
- 1/2 cup peanut butter
- 1/3 cup maple syrup
- 1/3 cup cacao powder
- 250g vanilla coconut yoghurt
- 2 tablespoons raspberry powder
- Fresh raspberries and strawberries for topping
Directions
- Place in your Vitamix Ascent Dry Grains Container 1 cup of almonds and blend at speed 6 for 20-30 seconds to form almond meal.
- Add to your Vitamix 2L Container maple syrup, peanut butter, almond meal, oats and cacao powder (in the order shown here).
- Blend at speed 5 for 30 seconds or until all ingredients are mixed. Use tamper continually.
- Pre-heat oven at 180°C
- Place 2 tablespoons of mixture into greased moulds and form cups.
- Bake at 180°C for 25-30 minutes or until golden brown.
- Prepare pink filling by mixing coconut vanilla yoghurt with raspberry powder.
- Let the cups cool down before filing them with coconut yoghurt.
- Add berries on top of yoghurt.
