Raspberry Chocolate Cups

Ingredients

  • 1 cup almonds
  • 1 cup oats
  • 1/2 cup peanut butter
  • 1/3 cup maple syrup
  • 1/3 cup cacao powder
  • 250g vanilla coconut yoghurt
  • 2 tablespoons raspberry powder
  • Fresh raspberries and strawberries for topping

Directions

  1. Place in your Vitamix Ascent Dry Grains Container 1 cup of almonds and blend at speed 6 for 20-30 seconds to form almond meal.
  2. Add to your Vitamix 2L Container maple syrup, peanut butter, almond meal, oats and cacao powder (in the order shown here).
  3. Blend at speed 5 for 30 seconds or until all ingredients are mixed. Use tamper continually.
  4. Pre-heat oven at 180°C
  5. Place 2 tablespoons of mixture into greased moulds and form cups.
  6. Bake at 180°C for 25-30 minutes or until golden brown.
  7. Prepare pink filling by mixing coconut vanilla yoghurt with raspberry powder.
  8. Let the cups cool down before filing them with coconut yoghurt.
  9. Add berries on top of yoghurt.
