Healthier Sausage Rolls

Ingredients
- 500g butternut pumpkin, diced
- 1 large brown onion, quartered
- 1 zucchini, cut into thick slices
- 2 cloves garlic
- 3 Tablespoon olive oil
- 2 teaspoon chilli flakes
- Pinch of salt
- 400g cooked brown lentils
- 200g feta, crumbled
- small handful parsley
- 4 sheets of low fat puff pastry
- Sprinkle of sesame seeds
- Tomato sauce, to serve
Directions
- Preheat the oven to 180°C and line a baking tray with baking paper. Arrange pumpkin, onion, zucchini and garlic on the baking tray, drizzle with 2 Tablespoon of oil and sprinkle with spices. Bake for 25-30 minutes or until the vegetables are tender.
- Remove vegetables from the oven and place into Vitamix along with lentils, feta and parsley and secure the lid. Select the lowest setting and slowly increase to 3, using tamper to press ingredients into the blades until combined.
- Lay out 2 sheets of puff pastry, cutting each in half lengthwise. Add the mixture along the long edge and roll the pastry over to seal. Cut into 4 even rolls. Repeat with the remaining pastry and mixture. Arrange the rolls on the baking tray, brush with remaining oil and sprinkle with sesame seeds. Bake for 25 minutes until golden brown. Serve with sauce.
