Chickpea Blondie
Easy to make in your Vitamix but difficult to resist! These are perfect for when you're looking for a guilt-free crowd-pleaser.

Ingredients
- 60ml almond milk
- 200g canned chickpeas, drained
- 60g coconut sugar
- 1 tbspn of almond butter
- 1 tbspn of coconut flour
- 1/4 tsp of vanilla powder
- 1/2 tsp of baking powder
- White chocolate chips for topping (optional)
Directions
- Pour the almond milk into the Vitamix container then add the canned chickpeas and sugar
- Start on speed 1 and slowly increase to 10. Blend for about 40 seconds until the ingredients are combined into a thick mixture. Use the tamper to push ingredients through the blades if you need
- Pour the mixture into a bowl and add the almond butter, coconut flour, vanilla powder and baking powder and fold it all together with a spatula
- Spoon the blend into a muffin tray and sprinkle the white chocolate on top
- Bake in the oven at 200°C for 15-20 minutes
