Cauliflower Parsnip Purée
This purée is a great alternative with bold flavour to traditional mashed potatoes.

Ingredients
- 450g cauliflower, cut into florets
- 225g parsnips, large chop
- 1 tsp prepared horseradish
- 1 tbsp extra-virgin olive oil
- ½ lemon, zested, juiced
- 1 tsp kosher salt, optional
- ½ tsp ground black pepper
Directions
- Boil the cauliflower and parsnips until tender (about 10–15 minutes). Drain.
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 60 seconds, using the tamper to push ingredients toward the blades. Serve warm.
