Cauliflower Parsnip Purée

This purée is a great alternative with bold flavour to traditional mashed potatoes.

Ingredients

  • 450g cauliflower, cut into florets
  • 225g parsnips, large chop
  • 1 tsp prepared horseradish
  • 1 tbsp extra-virgin olive oil
  • ½ lemon, zested, juiced
  • 1 tsp kosher salt, optional
  • ½ tsp ground black pepper

        Directions

        1. Boil the cauliflower and parsnips until tender (about 10–15 minutes). Drain.
        2. Place all ingredients into the Vitamix container in the order listed and secure the lid.
        3. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 60 seconds, using the tamper to push ingredients toward the blades. Serve warm.
