Ingredients
- 1/3 cup coconut milk (or milk of choice)
- 1/2 frozen pink pitaya
- 2 frozen bananas
- 1 frozen mango
- 2 peaches
- 1 cup coconut yoghurt
- 1 teaspoon chia seeds
- 1/3 cup fresh blueberries
- 2 fresh strawberries
Directions
- Add to your Vitamix mango, peaches and coconut yoghurt and blend at speed 5 until smooth consistency.
- Place blended mixture into ice cube moulds and freeze overnight.
- To your Vitamix add: coconut milk, frozen bananas, frozen pink pitaya, 4 cubes of frozen mango peach blend.
- Use the frozen dessert pre-program setting or blend at speed 10 for 30-40 seconds or until smooth consistency.
- Serve with your favourite toppings. I have added blueberries and strawberries with chia seeds and rosemary.
