Ingredients

  • 1/3 cup coconut milk (or milk of choice)
  • 1/2 frozen pink pitaya
  • 2 frozen bananas
  • 1 frozen mango
  • 2 peaches
  • 1 cup coconut yoghurt
  • 1 teaspoon chia seeds
  • 1/3 cup fresh blueberries
  • 2 fresh strawberries

Directions

  1. Add to your Vitamix mango, peaches and coconut yoghurt and blend at speed 5 until smooth consistency.
  2. Place blended mixture into ice cube moulds and freeze overnight.
  3. To your Vitamix add: coconut milk, frozen bananas, frozen pink pitaya, 4 cubes of frozen mango peach blend.
  4. Use the frozen dessert pre-program setting or blend at speed 10 for 30-40 seconds or until smooth consistency.
  5. Serve with your favourite toppings. I have added blueberries and strawberries with chia seeds and rosemary.
