Spring Minted Pea Soup
What do you get if you combine peas, olive oil and fresh mint? A dish that epitomises Spring. There’s nothing more pleasing in springtime than a pea and mint soup. Ingredients
- 1 Tablespoon olive oil
- 1 onion, chopped
- 2 cups vegetable stock
- 1 Tablespoon lemon juice
- 500 g frozen peas
- Handful of mint, chopped, plus extra leaves to serve
- Handful of flat-leaf parsley, chopped, plus extra leaves to serve
- ½ teaspoon ground cumin
- Pinch of freshly grated nutmeg
- 2 teaspoons sea salt
- ½ teaspoon black pepper
Toppings
- Sunflower seeds, toasted in a dry frying pan, to serve
Directions
- Place olive oil in a small frying pan and cook onion until translucent.
- Remove from pan and set aside.
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Start the blender on its lowest speed, then quickly increase to Variable 10.
- Blend for 5 minutes until warmed.
- Serve sprinkled with sunflower seeds and topped with extra mint and parsley leaves.
