Mango Coconut Nice Pops
Blend mango, coconut milk and a touch of maple syrup for a delicious summer treat. By Matt Dugan Vitamix Corporate Executive Chef.

Ingredients
- 450g mango fresh flesh, peeled, cut into chunks
- 1 cup (250mls) coconut cream
- Maple syrup, as needed to sweeten, if desired
Directions
- Pour the coconut cream into the Vitamix Aer Disc container. Add the mango and secure the lid.
- Select Variable 1. Start the machine and increase to its highest speed.
- Blend for 45 seconds to 1 minute using the tamper to press the ingredients into the disc.
- Pour into moulds and place in the freezer for at least 4 hours. Remove from the mould once completely frozen and enjoy.
