Levantine Cauliflower Ingredients
- 35 g sesame seeds
- ¼ teaspoon cumin seeds
- ¼ teaspoon ground turmeric
- ¼ teaspoon paprika
- 1 pinch ground cardamom
- ¼ teaspoon coriander seeds
- 450 g steamed or roasted cauliflower, cut into florets (about ½ head)
- 25 g lemon, peeled
- 1 garlic clove (or ½ teaspoon garlic powder)
- 2 Tablespoons extra virgin olive oil
- 1 teaspoon salt, optional
- ¼ teaspoon sumac
- ¼ teaspoon dried mint
Directions
- Place the first six ingredients, up until the cauliflower, into a small skillet set over medium-low heat. Toast until fragrant and aromatic.
- Once the spices and seeds are toasted, place the cauliflower and all remaining ingredients, including the spice mixture, into the Vitamix container and secure the lid.
- Start the blender on its lowest speed, then quickly increase it to its highest speed. Blend for 1 minute, using the tamper to press ingredients toward the blades.
