Salad Ingredients

¼ red cabbage
- 1 small red onion
- 1 yellow capsicum
- 1 green capsicum
- 1 mango
- 2 cucumbers
- 2 cups cooked rice noodles
Salad Dressing Ingredients
- 1 cup coriander
- ½ avocado
- 1 lime
- ½ cup extra virgin olive oil
- ½ cup water
- 2 tablespoons maple syrup
- Salt and pepper
Directions
- Prepare the salad dressing by adding the olive oil, lime juice, water, maple syrup, coriander, avocado, salt and maple syrup to the Aer Disc Container.
- Blend for 60 seconds at Speed 9.
- Cook rice noodles per instructions on the package and cool them in cold water. Strain the rice noodles.
- Cut finely the red cabbage, onion, cucumber, capsicum, and mango.
- To a salad bowl add the cut up vegetables, cooked rice noodles and mango cubes.
- Pour the salad dressing on top and mix together.

When using the Vitamix Aer Disc Container, ingredients are partially crushed, adding additional texture and bursts of flavour.
