Ingredients
For the Dressing:- 360ml water
- 350g (3) ripe avocado, peeled, pitted
- 1 tsp dried onion flake
- ½ tsp granulated garlic
- 10 fresh basil leaves
- ½ tsp kosher salt
- 454g pasta, cooked, cooled
- 60g (½) red onion, sliced thin
- 130g cherry tomatoes, cut in half
- 145g (½) cucumber, diced
- 180g artichoke hearts, chopped
Directions
For the Dressing:- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 40-50 seconds, using the tamper to push ingredients toward the blades.
For the Salad:
- Toss the avocado basil sauce with the pasta salad ingredients to combine. Hold in an airtight container until serving.
Chef's Note
- This clever dressing has all the delicious creaminess of a regular salad dressing, but is so much more nutrient dense, packed with healthy fats, fibre, and other vitamins and minerals thanks to the use of avocado.
