Cherry Ripe Energy Balls
These cherry energy balls are a delicious and nutritious snack that provide a boost of energy and satisfy your sweet tooth.

Ingredients
- 100 g oats
- 120 g almond meal
- 85 g desiccated coconut
- 10 dates (pre-soaked)
- 2 Tablespoons tahini
- 1 teaspoon vanilla essence
- 1 Tablespoon maple syrup
- 1 Tablespoon coconut oil
- 70 g frozen cherries
- Chocolate and dried raspberries for topping
Directions
- Place almonds in your Vitamix Dry Grains container and blend at speed 3-4 for 1 minute to get almond meal.
- Place oats in your Vitamix Dry Grains container and blend at speed 7-8; for 1 minute to get oat flour.
- Add coconut oil, maple syrup, tahini, vanilla essence, oat flour, almond meal, desiccated coconut, frozen cherries, dates to your Vitamix Standard container and blend until all ingredients mix together, Speed 4 for 40 seconds. Use tamper to help achieve a smooth texture.
- If mixture is too sticky, add extra almond meal/oat flour.
- Roll out the balls from mixture and place in the fridge before coating with chocolate.
- Drizzle melted chocolate and sprinkle dried raspberries on top of energy balls, then place them back in the fridge for an hour.
- Store in the fridge.
