Cashew Cream Cheese on Toast with Morels & Ramps

Ingredients
- 1 tbsp olive oil
- 113 g fresh morel mushrooms, cleaned and trimmed
- 170 g fresh ramps [or pearl onions], cleaned and trimmed
- 3 garlic cloves, peeled and crushed
- 6 sprigs fresh thyme leaves
- ¼ tsp kosher salt, optional
- ¼ tsp ground black pepper
- 60 ml dry white wine
- 400 g rustic bread, toasted
- 120 ml Savoury Cashew Cream Cheese
Directions
- Heat olive oil in a medium skillet over medium heat. Once hot, add morel mushrooms, ramps, garlic, and 4 of the thyme sprigs. Season with salt (if using) and black pepper. Sauté for 6–8 minutes, or until softened and beginning to brown.
- Deglaze the pan by adding the white wine. Cook, stirring and scraping the pan, until most of the wine has cooked off. Take pan off heat. Discard thyme sprigs.
- Spread Cashew Cream Cheese on each piece of toasted bread. Top each with a spoonful of the sautéed mushroom mixture. Pick the remaining 2 sprigs of thyme and sprinkle the leaves over the toasts. Serve immediately.
