Asparagus and Cashew Cream Soup
Keep soups simple, flavourful and creamy by blending cashews instead of dairy, and keeping some ingredients raw to cut back on prep time.

Ingredients
- 720ml vegetable stock
- 340g steamed or raw asparagus, root end trimmed
- 140g roasted cashews
- 1 slice, or 5g, yellow onion, peeled
- 1 small garlic clove, peeled
- 3 sprigs, or 8g, Italian flat leaf parsley, leaves only
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed.
- Blend for 5 minutes 45 seconds, or select the Hot Soup program and allow the machine to complete the programmed cycle.
